Second step in our chocolate journey : Cracking the beans to release the cocoa nibs from the husk. All that done by hand, one beans at the time. While some would find this extremely boring, we really enjoy it, as it allows the mind to rest for a while, almost like meditation. Now we have nibs and husk, the nibs are going to go ahead in the step 3 of this exiting journey, while the husk will have to find a different use. Fear not chocolate lovers, we keep our husk for "chocolate infusion", a drink to enjoy cold or hot, that tastes just like chocolate but without the calories. All you need to do is infuse the husk into water, and Voila, a delicious guilty free chocolate drink.
